Well there are a lot of grids people use for that and use the phrase "should use them". There aren't any shoulds here. Only guidelines.
Guidelines help you follow the safer option, that doesn't go wrong but sometimes may end up look.. boring.
You don't have to do that. It's helpful knowing the guidelines but it's more liberating to experiment and come up with a ratio you're satisfied with.
For this logo, I gave the mark the same height as the x-height of the type. Most guidelines would ask you to make it slight more than the overall type height. But it didn't look good on this logo.
So do what's right for the brand. That's simply it.
